Kombucha ~ the benefits and how to make yourself

MAKING KOMBUCHA

Ingredients
* a scobie
* a min. 3 litre glass jar
* 1 – 3 1 litre glass bottles
* organic raw sugar ( min. 1 cup to start)
* organic black ( english breakfast or ceylon ) or green tea
* kettle and hot water

Directions 
1. Boil 1 litre of water and place in 3 litre vessel ad let cool till room tempreture
2. Add 1 teabag  and 1/4 cup raw organic sugar (build up to 3 liters to ratio, increase by a litre every batch )
3. Add SCOBY from fridge into the fermentation house ( 3 litre vessel) and place a tea towel over the top with elastic band to hold in place.
5. Leave for 5 – 10 days ( less time – less fermented – more sugar content; more time – more fermented – more vinegar flavour )
6. Decant Komucha solution into litre bottles and refrigerate.
7. Option to add peppermint, ginger , lavender etc for different flavor – ferment outside fridge for 2 days before refrigerate.
7.Place scobie in fridge with some of the kombucha juice while you make up the solution again.
8. Over time your scoby will grow in thickness. It is growing baby scobies under her ~ these can be seperated easily with fingers and passed on to friends. Some may naturally stay with mumma and increase her size and potency .

Important Tips
* no metal in with scobie
* keep scobie in fridge while not fermenting – and out of fridge when in kombucha production ( away from direct light)
